How to make spinach banana pancakes
The hidden veggie spinach banana pancakes are really easy to make. I don’t attempt complicated recipes, it’s just not my jam. But these pancakes I can whip up in a few minutes with a coffee cup in my hand. Now we’re talking.
To blend the pancake batter, you will need to use your blender. The recipe will come out much better if you blend the dry ingredients and wet ingredients separately. That said if you’re short on time you can throw everything in at the same time.
First, combine the rolled oats, salt, cinnamon and baking powder into the blender. Blend until the mix become like a fine powder then set the mix aside into a mixing bowl. Then blend the spinach with the milk (regular, oat or coconut milk), yogurt (regular or greek), banana, egg and honey. Blend until totally smooth!

The easiest way to cook these pancakes is to use a pancake griddle but you can also use a non stick pan if you don’t have one on hand! Heat the pancake griddle or pan over medium heat. Pour batter onto the pan to form a small pancake and cook for 2 to 3 minutes. Then, flip and cook the pancake about 2 minutes on the other side. Flip and cook for an additional 2 minutes. Let the pancakes cool down and serve to your hungry toddler! Watch in awe as your toddler eats spinach without protesting.
