Overnight oats are always a hit at our house, especially when they taste like a healthy version of a Chubby Hubby Ben and Jerry’s ice cream. This is a delicious, filling and easy breakfast recipe. These banana chocolate overnight oats are perfect when you don’t want to prep anything in the morning since you can get everything ready the night before.

I love oatmeal. It is filling enough to to power you through the day but it also just has such a rich and creamy texture that is so good in the morning hours. Plus, making oatmeal is crazy simple, too. (And before I’ve woken up completely and had some caffeine pulsing through my veins, this is one recipe that I’m happy to wake up to and know that it’s ready to eat and enjoy!)

Meal prepping is awesome. Because you do all the work on Sunday then you’re pretty much done for the rest of the week! So when you wake up and your toddler is throwing a tantrum because you chose the wrong color socks, you don’t have to worry about making breakfast.

As long as I can have a few recipes on hand that I’ve been able to prep and have ready, I don’t have to worry about if I have anything healthy and ready to go. How Long Do Chubby Hubby Overnight Oats Need to Soak?

Overnight oats don’t actually need to soak overnight – 3 to 4 hours is long enough to make them! Overnight is obviously better because the oats will get softer and smoother. But if you are in a rush you can make these banana and chocolate overnight oats in only a few hours and serve them for breakfast!

How Long Do Overnight Oats Last in the Fridge?

These banana chocolate overnight oats should last for up to 4-5 days in the fridge. Just make sure to store them in a mason jar or airtight container. I personally think that overnight oats get too mushy after a few days so I prefer to finish them in 3 days max.

How To Make These Easy Banana and Chocolate Overnight Oats

Don’t worry – the list of ingredients is short. (But the taste is huge!)

  • 1 (pint size) jar with lid
  • ½ cup old fashioned rolled oats
  • ½ cup almond milk (or milk of your choice)
  • ⅛ teaspoon mineral salt
  • 1 tablespoon unsweetened cocoa powder
  • 1 small ripe banana, mashed
  • 1 tablespoon natural peanut butter or other nut butter
  • ½ teaspoon vanilla extract
  • Optional: Coarsely chopped peanuts (or nuts of your choice)
  • Optional: 1 to 2 teaspoons monkfruit sweetener (or sweetener of your choice)

This is actually a really simple recipe to whip up ahead of time so if you have a little baker in the family, they’re going to love joining in on the fun. Plus, it’s a great way to work on their measuring skills as well.

Mix all ingredients together in jar and seal tightly. 

Place in the refrigerator overnight.

Eat cold or remove the lid and microwave for about 1 minute to eat warm.

Fun Modifications For These Mason Jar Banana and Chocolate Overnight Oats

While this overnight oats recipe is perfect just the way it is, you can always add in some other fun and healthy options, too.

Our family is not a fan of overly sweet oats so the natural sweetness of the banana is enough for us. But you can add monkfruit sweetener, coconut sugar or honey if you would like to make the oats sweeter.

If your kiddo can’t eat peanuts you can easily replace the peanut butter with almond, sunflower or cashew butter.

If you want to add some toppings, unsweetened shredded coconut is a great addition to this recipe. You can also add some chia seeds to the mix. For a real treat, sprinkle in some dark chocolate chips!
